Proprietors Jeff Clock and Cathy Rodarte
combined their individual talents to open the Amado Territory Steakhouse
with one simple goal—to be proud of every dish that they served in a
casually elegant atmosphere. Jeff’s domain is the kitchen; here he
calls upon his twenty-five years of restaurant experience to achieve
this goal. Having honed his grilling skills under the tutelage of
Steven Raichlen, the award-winning cookbook author and host of the PBS
television series, The Primal Grill and Barbecue University, Jeff
knows what it takes to be proud of every dish he prepares—serve only the
finest beef and freshest fish he can find.
Jeff skillfully sears the steaks over a
gas-burning grill with lava rocks to lock in their natural savory
juices, allowing the rich “goodness” of aged, marbled steaks to burst
through with each mouthful. He also personally prepares everything from
scratch, including the fresh-cut French fried potatoes, savory house
made soups, chipotle fry bread, a decadent devil’s food cheesecake,
caramelized sugar topped crème brûlée and his rich and creamy Kahlua
flan.
In
the restaurant Cathy personally greets everyone. Behind the scenes,
Cathy draws upon her business expertise to manage the daily operations,
develop advertising and marketing programs, and purchases all of their
meats, produce, wines and spirits from carefully selected purveyors.
Adding her personal flair for decorating Cathy’s presence is noticed
everywhere the eye can see.
